Carlos used his swimming pool, sin agua of course, to store 5 tons of avocados he got on special. He'd forgotten about the swimming party planned for that week. However, everyone thought it was a great idea & after Carlos' party, guacamole dipping spread through the West literally overnight.

The recipe for this Brown Derby original (mounds of lettuce, fresh tomatoes, juicy chicken, avocado, bacon & Carlos' own special vinaigrette dressing, mixed with special bleu cheese chunks and lightly tossed) found it's way into Carlos' back pocket, along with 17 napkins & a handful of ashtrays.

This dish is named after TU TACO, the royal chef to the emperor Maximilian of Mexico, & the man credited with the invention of heartburn. Max had him drown in a vat of his own hot sauce in 1866. Max's next chef, JUAN ENCHILADA, corrected the problem & today neither tacos nor enchiladas cause heartburn.
